Black Bean and Red Pepper Burgers from Veggies on the Counter

This vegan burger recipe features black beans, red bell pepper, onions, garlic, buckwheat flakes (or rolled oats), green olives and olive oil, sunflower seeds and a delicious blend of spices, including cumin, coriander and smoked paprika.  The patties and condiments are wrapped in large, think slices of eggplant - a fabulous, healthier, gluten-free option!
