Vegan Southwestern Green Chili Stew from Treehugger

This easy, south of the border vegan stew is full of bold flavors and is so healthy!  We like ours with a little fresh cilantro sprinkled over the top just before serving!  The recipe features canned green chili peppers, fresh jalapeno pepper, onion, garlic, red bell pepper, fresh tomatoes, corn, new potatoes, red beans, pinto beans, kidney beans and olive oil.
