Tofu Makhani : A Delight for the Vegans from Bold Sky

In Indian cuisine, "Makhani" means "with butter" and is typically associated with dishes containing chicken ("Murgh Makhani") or an Indian white cheese ("Paneer Makhani").

This exotic and easy vegan version features tofu, onions, lemon juice, fresh tomatoes and tomato puree, cashew nut paste, ginger-garlic paste, fresh cilantro, jaggery (an unrefined natural sweetener made from evaporated sugar cane) and lots of healthy spices, including turmeric, cumin, coriander, and kasuri methi (dried Fenugreek leaves).
