A healthy lentil soup made with mostly common vegetables (onion, carrots, garlic, collard greens or kale), pantry ingredients (brown or green lentils, canned diced tomatoes, olive oil) and a squeeze of lemon for bright, fresh flavor. It is well seasoned with a several spices including curry powder, thyme, red pepper flakes and ground black pepper.

Quinoa and Bean Burger: Great to Grill Vegan Recipes from Holy Cow!

This healthy burger patty has a texture that holds well on the grill and has all kinds of veggie goodness rolled into it as well as a surprising and unique traditionally Indian spice mixture:  mustard, cumin, coriander, paprika and garam masala powders.  It can be made spicy with the addition of cayenne pepper.  The recipe features red kidney beans, quinoa, chickpea (garbanzo bean) flour, kale, carrots, onions, garlic, sage and tamari or soy sauce.

Kale and White Bean Crostini by Jeanine Donofrio

This delicious kale and white bean crostini recipe can be easily vegan-ized.  Most French baguettes are vegan (but double-check the ingredient list!) and the Parmesan cheese can be substituted with  Parma! Vegan Parmesan.

Spicy Vegan Chili Burgers by LunchBoxBunch

This flavorful and delicious vegan burger recipe features canned kidney beans, brown rice, chopped kale and spicy vegan sausage link from either Tofurky or Field Roast.

What we especially love about this recipe is the list of suggested optional add-in ingredients, including roasted corn, chopped peanuts, cooked lentils, ground flax seeds and cooked sweet potato.  By incorporating these suggestions, you can practically make a different burger each time!
