Avocatta Lasagna Rolls from The Vegan Version

Avocatta Lasagna Rolls - The Vegan Version
From The Vegan Version about this recipe for "Avocatta" Lasagna Rolls:

"These were really easy to throw together, were really flavorful and were also very filling. I am not sure why there are not more recipes out there that substitute avocado for ricotta. Maybe because avocado is often associated with Mexican cuisine and lasagna with Italian.  I don't know, but I am glad I decided to try this as it was very tasty. I love the creaminess of the avocado blended with more traditional Italian flavors."

This easy, delicious and nutritious recipe features healthy ingredients such as avocado, baby spinach, tomatoes, and fresh parsley.  The author of the recipe notes that there is a lot of opportunity to change what is added to the mix.  We agree - this recipe is very versatile!

Warm Roasted Butternut Squash and Quinoa Salad from Kitchen McCabe

Warm Roasted Butternut Squash and
Quinoa Salad from The Kitchen McCabe
From Kayley (The Kitchen McCabe), the author of this recipe:

I love the red quinoa. Did you know that quinoa has the highest protein content of all grains? It has twice as much fiber as other grains and is full of essential vitamins and minerals, including iron. I love it’s texture and nutty flavor. It’s pretty great stuff.

This delicious and healthy vegan salad can be served warm or cold and is as lovely to look at - as its nutritious to eat!

Tip:  this recipe calls for a small amount of raw honey, which can be easily substituted (or omitted altogether).
