BBQ Cauliflower Tacos with Chickpeas and Quinoa from Good Dinner Mom

BBQ Cauliflower Tacos with Chickpeas and
Quinoa (Vegan + GF) from Good Dinner Mom
From Good Dinner Mom:

"BBQ Cauliflower Tacos with Chickpeas and Quinoa is super flavorful. And the fact that it’s vegan, gluten-free and incredibly healthy is an after-thought… but a good one :). Cauliflower and chickpeas get mixed with a classic barbecue rub (who would have thought?), then tossed with quinoa, and layered with a super-simple yet perfect cole slaw, wrapped in heated or fried corn tortillas. Then go crazy with lime juice, sliced jalapenos, salsa if you want (and of course, cheese for a vegetarian option) – or just keep it simple. Love!"

Black Bean Tempeh Tacos from The Garden Grazer

Black Bean Tempeh Tacos from TheGardenGrazer.com
From thegardengrazer.com, the author of this recipe:
I love using tempeh as a ground meat substitute! Most often I use it in pasta sauce, but it's awesome in so many other dishes as well. These Black Bean Tempeh Tacos were an early recipe ... Tacos are always a great choice for weeknight meals - quick, easy, delicious! Plus everyone can personalize their own with the toppings they love. These are pleasantly filling, with a double protein punch from both the beans and tempeh. (For us, each taco has over 10g protein!) My favorite toppings are avocado, lettuce, and juicy pico de gallo which pairs wonderfully. Let's get this taco party started!
